This is a cheese made only from summer milk from pasture grazing, left to mature in ancient rock rooms for about 14 months. Here, on wooden boards, it is occasionally turned, the rind thickens, and the texture becomes denser and enriched with aromas.
Malga Brol is an ancient Cimbrian building from the 1800s located in Alta Lessinia, the plateau of the Venetian Prealps or Little Veronese Dolomites. The Cimbri were a people who fled from Saxony and came to Italy in search of new land, which was granted to them by the Scaliger lords in the 1400s. In Lessinia, the Cimbri were tasked with grazing the Brogne sheep, a breed still existing today and remarkable for the quality of its wool. Malga Brol is a monumental witness to this history and still hosts cows and sheep along with a small dairy.
Raw partially skimmed cow's milk, natural goat's rennet, sea salt
Great hard cheese to include on a premium cheese board. Excellent to pair with corn polenta like Taragna. Also ideal for grating over rich meat risottos. It pairs well with medium-structured red wines such as Nebbiolo, Lagrein, Valpolicella Superiore, Cabernet Sauvignon.
