Denis Secco has renovated the ancient Speloncia hut located between the peaks of Monte Grappa. Here he produces an award-winning cheese that has earned multiple medals in national competitions for raw milk cheese from high mountain pastures. This cheese has a unique feature: on one side, it is stamped with the numbers 3, 6, 9, 12 of a clock. In fact, ancient history teaches that shepherds, often unable to afford a scale, weighed their products by the hour
