This is a cheese made from raw milk of the Alpine Brown breed that is aged for at least 60 days in the mountain dairy.
Denis Secco has renovated the ancient Speloncia hut located between the peaks of Monte Grappa. Here he produces an award-winning cheese that has earned multiple medals in national competitions for raw milk cheese from high mountain pastures. This cheese has a unique feature: on one side, it is stamped with the numbers 3, 6, 9, 12 of a clock. In fact, ancient history teaches that shepherds, often unable to afford a scale, weighed their products by the hour.
Raw cow's milk, natural goat's rennet, sea salt
It has a strong flavor of melted butter and is definitely creamy and pleasantly milky on the palate with a spicy sensation.
Great for seasoning coarse corn polenta like Maranello; for upscale appetizers and delightful charcuterie boards.
It pairs well with soft red wines such as some Merlot from Veneto.
