The apricots come from the fields on the clayey soils of the Mantuan countryside. Senga collects them close to ripeness to preserve their firmness and the aromas that we find very pronounced and fresh in the mustard.

Therefore, it is particularly spicy, but Senga manages to produce it in a very balanced and delicate way. With her own Apricots, she creates this mostarda to pair with semi-aged goat cheeses, Asiago, Montasio, and Brie.
