To produce the jelly, the liquid component must first be heated, which in this case is the Amarone, which loses its alcoholic component, releasing the sugary part contained. The wine is the core of the jelly because it is the base that releases the aromas and persistent flavor. 


THE AMARONE DELLA VALPOLICELLA

Amarone is one of the most praised Italian red wines. It is characterized by a very rich taste. The color is a very intense ruby red, even tending towards garnet.
The taste is fruity: it has the flavor of ripe red fruits, particularly cherries. In the older wines, one can also perceive very woody hints, of tobacco and coffee.
