The Arista al Forno from the Salumificio Pavoncelli is a cooked roasted cured meat, typical of Italian charcuterie, produced using boneless loin cuts of pork, brined and flavored with a seasoning made of spices and aromatic herbs, cooked and vacuum packed, and pasteurized.
The color is characteristic: light pink inside and a more intense pink on the surface. When sliced, it is compact and soft. Each slice is well defined with various lean parts correctly distributed. It has a distinctive and pleasant roasted fragrance with clean aromas and strong notes of spices. Flavor: great balance between the taste of roasted meat and persistent aromatic notes. On the palate, it is soft, with a pasty texture and melt-in-your-mouth sensations.
The Oven-Baked Arista from Salumificio Pavoncelli (which we are presenting here in a half form of 3kg) is a perfect main dish to serve alongside side dishes like oven-baked potatoes or boiled beans. It is also exceptional with mashed potatoes or a bit of pearà. We recommend pairing it with a Chianti, a Montepulciano d'Abruzzo, or a Valpolicella superiore.
