The Pavoncelli Aged Smoked Speck is produced from a selection of fresh hams of pork deboned, trimmed in the typical speck cut resembling a shield or large slice, with the thigh removed and the fat trimmed, a process that gives this cured meat its distinctive heart-shaped and flat profile.
Prepared in this way, the hams are processed with a brine and a cure whose recipe is a well-guarded secret of the Pavoncelli salami factory; a gentle massage follows, which makes the meat more tender and evenly flavors it. Finally, the hams are naturally smoked with beech wood..
The Aged Smoked Speck is preferred by many because it is much easier to taste compared to the classic variant; it is not an aged cured meat, but thanks to natural smoking and steam cooking, the flavor remains delicate yet tasty, persistent, with a clearly noticeable aromatic note from the smoking process.
