The Pancetta Salamata falls into the category of aged salamis. The Pavoncelli Salami Factory prepares it according to the recipe of Ernesto Pavoncelli, which, changing the traditional viewpoint, involves mixing the pancetta into the mixture. In this way, the slice is more balanced and soft on the palate; the taste is also sweet and pleasant, maintaining all the aromas and characteristic flavors of pancetta and sopressa.
It is prepared using only and exclusively pancetta, separating in a distinct way the fatty part from the lean part, cut and diced using the pointed knife technique. In the end, it is mixed with an original seasoning of salt, spices, and aromatic herbs.
After several months of aging, the Pavoncelli salami bacon is perfect as a board suggestion, to be paired with wines, beers, and cheeses with strong and persistent tastes.
