The Salumificio Pavoncelli prepares it according to the recipe of Ernesto Pavoncelli, who, by changing the traditional perspective, proposes that the pancetta be mixed into the dough. This way, the slice is more balanced and soft on the palate; the taste is also sweet and pleasant, maintaining all the characteristic aromas and flavors of the pancetta and sopressa.
It is prepared using only and exclusively pancetta, separating the fatty part from the lean part in a distinct manner, cut and chopped using the pointed knife technique. In the end, it is mixed with an original seasoning of salt, spices, and aromatic plants.
