The Salame Verona from the Salumificio Pavoncelli is a cured product made from pure national pork, stuffed into a natural casing and tied manually with string.
When sliced, it shows a homogeneous distribution and proportion of fat and lean meat, an intense red color for the lean meat and white for the fat, as well as a good hold of the slice upon cutting.
The Salame Verona has characteristic drying and aging processes because the Verona area is located at the confluence between the mild and humid microclimate of Lake Garda and the dry air coming from the mountains.
The geographical combination of these factors makes the Veronese environment particularly suitable for perfect aging.
The Salame Verona is a cured meat that is particularly suited to be enjoyed raw as a snack or appetizer, but it is also excellent when grilled alongside some toasted polenta.
