This smoked cow's ricotta is a flavorful dairy product that belongs to the tradition of the malghe scattered along the slopes of the Lessini mountains in Verona. It is obtained from the whey derived from the processing of raw milk Monte Veronese cheese, to which unskimmed milk has been added.
The fresh ricotta is salted on the surface and placed in a special chimney where it undergoes smoking for two days with oak and beech wood from Lessinia. The result is a cheese that has an intense hazelnut color on the outside, while the inside is white and pure. The aroma is of toasted wood, and the flavor is delicate, also with notes of roasting.
