The Smoked Cured Pancetta from Salumificio Pavoncelli offers culinary experiences you'll undoubtedly remember. After careful trimming, the pancetta is aged for at least 90 days. The seasoning is done in a strictly artisanal way with various types of pepper, grains, and herbs capable of providing a total immersion in the world of cured meats.
The smoked stewed pancetta showcases a pink color for the leaner parts alternated with white strips of fat, its aroma is clean and intoxicating, and its spices add a soft and fragrant note.
The trimmed pancetta is salted using brine to make it even more tasty and appetizing. After salting, the pancetta is artisanally processed for at least 24 hours, cooked in steam-saturated ovens, and smoked with beech wood to give it a natural golden color.
The Smoked Aged Pancetta from the Salumificio Pavoncelli (which we present here in a 650g portion) can have various applications in the kitchen. It adds a unique touch to the filling of a homemade focaccia. Excellent to taste on bread or on hot crostini. Unmatched on spaghetti for a nice plate of carbonara.
