The Sbrisolona is a typical dessert of the Mantuan tradition whose recipe dates back several centuries. This cake is produced by the bakery Dolci Sereni in Mantova, where tradition is a true corporate philosophy. Here we present a delicious variation enhanced with hazelnuts.
This dessert owes its name to its crumbly texture, with large and small crumbs that form when it is broken to be consumed, as Sbrisolona must not be cut, but broken by hand.
This is a completely unique format as the cake is presented not whole, but in a tray containing 10 single portions.
The Sbrisolona seems to have originated before the seventeenth century as a poor dessert of peasant origins that was prepared on special occasions such as the birth of a child or the promise of a marriage, to then be preserved for a long time. Sbrisolona was refined with the arrival at the court of the Gonzaga family, who enriched it by introducing more noble ingredients.
The Sbrisoline with Hazelnuts from the bakery Dolci Sereni are excellent to enjoy paired with a sweet and liquorous wine such as Malvasia, Passito di Pantelleria or Vin Santo. The pairing with grappa is a must, with which this dessert is often soaked.
