The Riso Sant'Andrea Classico from Acqua e Sole is truly extraordinary! It is characterized by a long grain (although smaller compared to Carnaroli) whose dimensions and intrinsic characteristics make it an excellent compromise between cooking resistance and absorption capacity of seasonings.
This is why many prefer it to Carnaroli for preparing risottos, while others use it more often for soups.
Riso Sant'Andrea, a variety of riso Baraggia once cultivated exclusively in the provinces of Biella and Vercelli in Piedmont, obtained the recognition of a DOP certified product in 2007.
