The Ventresca di Tonno Rosso in Olio di Oliva from Sarda Affumicati is truly exceptional! The ventresca is the most precious part of the red tuna or yellowfin tuna, usually consumed fresh or preserved in olive oil.
The ventresca is obtained from the fattest part of the animal, which wraps around the abdominal cavity. These muscle strips are rich in fat, making the meat softer and tastier.
Only the noblest parts are selected for the artisanal processing of Sarda Affumicati: the tuna is steamed, canned in large containers, and subjected to a maturation period of at least six months. It is then canned in smaller containers, covered with olive oil, and allowed to mature for an additional six months.
To ensure the excellence of the product, Sarda Affumicati also uses only the best Red Tuna from Sardinia, also known as bluefin, coming exclusively from selected tuna traps or Mediterranean bluefin tuna of high quality.
