The tarantello or musciame di tonno rosso is derived from the upper part of the ventresca of tuna: the flesh, descaled, cleaned, and washed, is used to make fillets that are then salted. The meat is subsequently dried and finally preserved in oil.
To ensure the excellence of the product, Sarda Affumicati also uses only the best Tonno Rosso di Sardegna, also known as pinna blu, sourced only from selected tuna fisheries or Mediterranean Bluefin tuna of high quality.
