Alba Vitae 2018 - Kairos by Zyme

The solidarity commitment of AIS Veneto and its project Alba Vitae continues with this eighth edition. The initiative provides, as every year, for a delegation of sommeliers from the association to select a wine excellence from the region to donate the proceeds from its sale to charitable works.

This year the proposed wine is the Kairos 2015 from the Zýmē winery in San Pietro in Cariano (VR), in the heart of Valpolicella, in an exclusive magnum format.

Kairos: how it is made

Kairos is born from the union of fifteen grapes, each with its own characteristics, that blend together like the instruments of an orchestra leading to a fascinating and unique wine.
To make this wine, the Zýmē winery collects the grapes based on the varietal ripeness of each single vine with gradual resting in plateaux until the conclusion of the entire harvest.
The vinification occurs in steel for 20/25 days without the use of selected yeasts.
After 8/10 days from the racking, it goes into French oak barrels where it spends at least 24 months without ever being transferred.

The proceeds to ABEO Onlus Verona

AIS Veneto will donate the entire proceeds from Alba Vitae 2018 to ABEO Onlus VERONA, a reference association for fundraising aimed at the Pediatric Oncology Department of the Donna Bambino Hospital in Borgo Trento in Verona. The association carries out support activities for families of children affected by solid tumors and leukemias, promoting and supporting all initiatives planned for this type of journey, in terms of prevention, optimal treatment, rehabilitation, and socialization understood as reintegration into a normal life.

Alba Vitae 2018 - Kairos by Zyme: use in the kitchen

The Kairos di Zýmē pairs very well with white and red meat dishes with robust and spicy sauces. Excellent with flavored and aged cheeses and wild game.

Kairos: a true work of art

It presents a brilliant ruby red color with reflections that shift to garnet with aging. Dense on the nose and complex in its expression, with notes ranging from berry jam to cherries, moving on to spices like cocoa, vanilla, cinnamon, and finishing with an almost balsamic roundness. On the palate, it is soft, with an incredible harmony and great drinkability. Complex, rich, and of remarkable persistence.

Kairos, a mosaic of sensations

A true mosaic of sensations this wine, whose bottle features a special and very artistic label. It indeed recalls the costume of Harlequin, which is made of patches of many colors, just as Kairos is made with 15 different grapes, each with its own characteristics. In ancient Greek, Kairos means “opportune, for the right moment”. The addition of the sundial and the clock expresses, in fact, the concept of exact time.
