The Chiusello di Capra is another little masterpiece from Opere Casearie. It is a goat's milk cheese that takes its name from the Valchiusello, the valley where the dairy is located, in Baldissero Canavese.
The flavor, during the maturation of the Chiusello, acquires increasingly intense tastes that give it its characteristic delicate and rustic aroma. Straw-white in color, with widespread and irregular fine eyes.
The Chiusello di Capra (which we present here in a 500-gram portion) is perfect with a crunchy loaf and a good glass of dry and slightly aromatic white wine such as Sauvignon Blanc and Pinot Grigio. It is a great ingredient for risottos, but also works wonderfully in a warm savory pie with caramelized onions and a floral pint of Blond Ale.
