The Chiusello di Capra is another small masterpiece from Opere Casearie. It is a goat milk cheese that takes its name from the Valchiusello, the valley where the cheese factory is located, in Baldissero Canavese.
The flavor, during the aging of the Chiusello, acquires increasingly intense tastes that give it the characteristic delicate and rustic aroma. It is straw white in color, with a widespread and irregular fine eye.
The Chiusello di Capra (which we present on this page in a 1-kilogram portion) is perfect with a crunchy loaf and a good glass of dry white wine that is slightly aromatic, such as Sauvignon Blanc and Pinot Grigio. It is an excellent ingredient for risottos, but it works perfectly in a warm savory pie with caramelized onions and a floral pint of Blond Ale.
