Filotto aged with bergamot juice and peel 250g

Filotto from the Vigneto dei Salumi is born from the experience of Walter Ceradini, who decided to create a new line of cured meats: the Frutteto dei Salumi.

The Filotto is made from the loin sourced from selected Italian heavy pigs that is then flavored with the peel and juice of bergamot obtained only from selected productions. The piece of meat thus flavored is then aged for 4-5 months in the cellar.

On the nose, a fresh floral aroma is immediately noticeable, and the palate is quickly struck by a savory freshness that ultimately gives way to the unmistakable aroma of bergamot. Filotto is marketed vacuum-packed whole, weighing approximately 250g.
 

The Frutteto dei Salumi: citrus-flavored cured meats

The experiments conducted with products aged in Amarone and Recioto from Valpolicella have allowed the Vigneto dei Salumi to open its mind to new experiences, continuously discovering new aromas and flavors. Natural ingredients, local and always fresh, are the foundation of all the lines produced by the artisan workshop in Arbizzano di Negrar in Valpolicella.

In the case of the Frutteto dei Salumi line, Walter Ceradini and his collaborators have created new products using, in addition to the best quality Italian pork, the finest citrus fruits from our peninsula, thus demonstrating a greater awareness of all the scents that nature provides us.

The Frutteto dei Salumi line therefore embodies the sweet meeting between the authentic and artisanal cold cuts of Valpolicella and all the freshness of the selected citrus fruits, lemon, bergamot, and orange.
