The Mortarella hazelnuts from Masseria delle Stagioni are a typical variety from Campania.
They have a medium-small, sub-cylindrical fruit that is laterally compressed. The shell of the Mortarella hazelnut is quite thin, light brown in color, with slight streaks of a more intense color and slightly flattened at the bottom. The kernel is very aromatic, firm, white-ivory in color, and has an excellent taste. The Mortarella is cultivated in almost all hazelnut-producing areas of Campania (except for Giffonese) for its valuable characteristics suitable for processing.
The numerous elements contained in the hazelnut and their combined action have many health benefits, and some scientific studies have even shown that consuming at least 5 portions of nuts per week can reduce the risk of developing certain cancers. Furthermore, hazelnuts do not contain gluten and are, therefore, suitable for those who are gluten intolerant and allergic to wheat.
The Mortarella hazelnuts from Masseria delle Stagioni are excellent as a snack at any time of the day and can be used in both sweet and savory recipes.
To have roasted hazelnuts, just shell them carefully so that the fruit remains whole, put them in a hot oven at 180°C for 5-7 minutes (or in a non-stick pan over medium-low heat for a few minutes, making sure to stir occasionally) and once roasted, let them cool and then rub them in a cloth to remove the skins.
In pestos, instead of pine nuts or almonds, you can easily use hazelnuts, which pair very well with basil and parsley; in all recipes that involve the use of dried fruit, in fact, we can try to substitute the dried fruit with roasted hazelnuts. Try substituting walnuts with hazelnuts for making bread or in walnut sauce: they will surprise you with a particular and delicate taste that will conquer you.
