The Gorgonzola DOP sweet spoon cheese by Arrigoni is a blue cheese, soft, made from raw cow's milk, named after a town in Lombardy near Milan where it is said to have originated in the 12th century as a way to recover curd forgotten the day before.
The sweet version is soft, with a uniformly distributed blue marbling but characterized by mold that is primarily blue-green in color.
