Ingredients: Fresh Spiny Artichoke from Ittiri, pitted extra virgin olive oil from Bosana, white wine vinegar, salt, pepper.

How they are prepared: The freshly harvested artichokes from the farmers of Ittiri are stripped of the first outer and tougher leaves, deburred and finally trimmed from the stalk side, then immediately washed. They are then boiled and very carefully placed in containers, filled with oil and sealed.
