The Organic EVO Oil Frantoio del Borgo Calabria IGT from Azienda Agricola Francesca De Leo Alberti is a medium fruity oil characteristic of fresh grass and olive leaves. On the nose, there is a sensation of green, of artichoke stem and chicory. The taste presents a moderately high intensity of spiciness and bitterness. It is characterized by a flavor of green walnut and bitter almond. Fluid and balanced.

Harvest Method: Mechanical with shakers.

Mill: Within a few (1-2) hours after the end of the daily harvest, the olives are taken to the mill and processed. The olives are washed in running water, then passed through a crusher equipped with perforated grids to prevent oxidative heating phenomena even at this stage. The subsequent kneading of the paste takes place in closed stainless steel tanks (in the absence of water), regularly cleaned between different processes, for a time not exceeding thirty minutes and at a temperature not exceeding 21°C. The final extraction process follows with state-of-the-art centrifuges that separate the oil from the oily must.
