The Arrigoni Gorgonzola DOP sweet is a soft, blue-veined cheese made from whole cow's milk, named after a town in Lombardy near Milan where it is said to have originated in the 12th century to recover curd forgotten the day before.
The sweet version is soft, with a blue veining that is evenly distributed but characterized mainly by bluish-green molds.

The Gorgonzola DOP dolce di Arrigoni (which we present here in a 1/2 form of about 6kg) is a blue cheese excellent when paired with mascarpone, perhaps garnished with walnuts. You can also enjoy it with fruit, both cooked and raw vegetables, jam, honey, mustard, and chocolate.
Flavor: sweet, not very strong.
Crust: compact, rough, hard with a gray/pink color, not edible.
Paste: white or straw-colored, buttery and melting, veined due to the development of molds mainly bluish-green in color.
Sapore: dolce, poco deciso.
Crosta: compatta, ruvida, dura di colore grigio/rosato, non edibile.
