The sweet sausage from Casa Folino is made from a well-blended mixture of shoulder and belly meat from pigs, coarsely minced with lard, salt, and sweet chili sauce.
The mixture is stuffed into natural pig casings, subsequently pricked and then hand-braided into the characteristic "chain" shape. The product is then left to mature for thirty days.
