Focaccia dolce, a symbol of Ligurian culinary tradition. A baked sweet made through a slow fermentation with natural sourdough. It has a round shape where we can notice the characteristic triangle cut made before baking and sprinkled with granulated sugar on its surface. Its main ingredients are high-quality raisins and Italian pine nuts. It is important to remember the use of organic Italian flour in its dough, just like in Spongata. Traditionally, this sweet is given during the Christmas festivities, but today it is enjoyed all year round; it is mentioned by the Turin writer Mario Soldati in his journey through Liguria in Vapor di Val di Magra (1959).
History tells us of its use in ancient times by sailors, also thanks to the compactness of the dough and its long shelf life, which allowed it to accompany travelers both on land and at sea.
