Describing a food as "craft artisanal" implies an elevation, longevity, and dedication to perfection, or as close as possible to it. Compared to single-origin chocolate, which is only concerned with the source of the cocoa, the term "craft artisanal" applies to every phase of the creation. The term arose when some major chocolate producers began to co-opt the term "bean to bar chocolate." In the following years, chocolate producers and experts sought to define the term "craft chocolate - artisanal chocolate." The main pillars of artisanal chocolate are these: quality and traceability.
Chocolate makers who identify with the artisanal chocolate movement value the use of high-quality cocoa, carefully harvested and processed from the most aromatic varieties in the world. But they also want to ensure that the high-quality cocoa they use comes from people, not just places. The ideal of artisanal chocolate is not only to know your chocolatier but also the growers and the processes behind the cocoa beans that go into that chocolate bar. This is the journey that Compagnia del Cioccolato wants to take you on with the proposal of this Tasting Box involving three producers who have won the Tavoletta d'Oro as "Emerging Chocolatier" in recent years.
We have selected 6 chocolates from different cocoa-growing regions around the world, each with a clear provenance of the supply chain but also with evidence of the work of the individual "artisanal" chocolatier, craft indeed!
What does the tasting box include?
1) MACONDO-FAIR TRADE
90% dark chocolate with "Delicate from Davao" cacao from the Philippines, selected by Andrea Mecozzi.
A cacao that comes from a country already present in the international market with its unique cacaos. Predominantly sweet notes with a hint of smokiness, hints of walnut hull and dried figs.
2) MACONDO-FAIR TRADE
80% dark chocolate "Gentile del Guaviare" with cacao from Colombia, selected by Andrea Mecozzi.
A plantation in the Colombian forest in San José del Guaviare, with the careful processing of the D'Origen growers. Notes of strawberry, pear, guanabana, raisins, and very ripe plum.
3) MACONDO-FAIR TRADE
65% dark chocolate "Forte di Lembà" made with cacao from São Tomé, selected by Andrea Mecozzi.
Predominantly cacao notes with hints of red fruit, wood, cinnamon, and cloves.
4) KARUNA
70% dark chocolate, organic, made with cacao from the Goground company in Kerala, India.
The cacao comes from the Idduki region, one of the areas with the greatest cacao vocation in the country. Karuna is a young chocolate venture recently born in the mountains of Alto Adige thanks to a couple of young enthusiasts: Armin Untersteiner and Katya Waldboth. This bar reveals aromas of raisins, spices, and red fruits.
5) AMARO
70% dark chocolate made by Marco Colzani with Trinidad Moruga cacao, we are therefore in the Caribbean area. A pleasant cacao aroma is accompanied by notes of cherry, cardamom, and bread. A bar made purely with only cacao and cane sugar.
6) AMARO
70% dark chocolate made by Marco Colzani with Peruvian Piura Gran Chililique cacao; this is a Criollo type cacao, with white beans, indicating very high quality. It is a rare vintage chocolate, with the harvest year indicated on its packaging. A fresh chocolate with hints of flowers and fresh fleshy fruit.
