This Prosecco DOC Brut 0.5 Bio produced by La Pria, originates from the Hills of Alonte and Orgiano in the Colli Berici, south of Vicenza.

The grape harvest for Prosecco DOC Brut 0.5 Bio La Pria takes place in August, using a double Guyot training system. As for the winemaking, it is softly pressed through special pneumatic presses. The aging and resting on the noble lees in steel lasts four months. For the sparkling process, the Italian Martinotti method (Charmat) has been chosen. The primary fermentation is carried out at very low controlled temperature with selected yeasts. Finally, regarding the secondary fermentation, it is performed at a refermentation temperature of 16°C. Then, tartaric stabilization at low temperature (-4 °C) is carried out, and finally, microfiltration is completed before bottling to separate the yeast cells from the sparkling wine.

This Prosecco DOC Brut 0.5 Bio produced by La Pria is designed for the aperitif but is also an ideal wine for any meal thanks to its very fine bubbles and persistent perlage, which make it light and fresh.
Ideal temperature: 7°C
Recommended glass: Use a medium-sized glass; it's better to avoid the flute, which does not allow the aromas to develop.
Organic Prosecco sparkling wine with a bright light straw yellow color, featuring fine and numerous bubbles. Aromatic profile characterized by fruity sensations of green apple, floral notes of chamomile, elderflower, lavender, and a chalky hint in the finish. The sip is fresh, saline with mineral perceptions and an acidic push reminiscent of grapefruit. It ages for at least 4 months on the lees.
Wine to pair with raw fish with a strong aromatic profile, such as Adriatic oysters or shellfish cooked in salty water. Great also with savory pies and appetizers. It prefers soft cheeses with a slight acidity.
