This DOP cheese is produced with buffalo milk coming directly from the farm. The milk is enriched with natural whey starter and rennet, then sent to the coagulation phase. The maturation occurs through natural lactic fermentation. Once the maturation is complete, the curd is pulled and shaped by hand. After a brief cooling in cold water to firm up the product, it is salted in brine. The cheese is sold in containers with liquid to preserve its freshness.
