This extraordinary Baltea Chardonnay Valdarno di Sopra Doc di Campo di Monte is an exceptional white wine, with an intense and persistent aroma of exotic fruit and hints of dried fruit. On the palate, it is a fresh, savory wine, with good acidity, an interesting texture, and a predominantly fruity persistence.
Soil Composition: loamy soil without skeleton, primarily exposed to north/south, on the hills of Valdarno di Sopra at an average height of 295 meters above sea level.
Vineyard: low cordon training system with 5000 vines per hectare.
Quality of the vine: Chardonnay clone no. 96 rootstock R140. Fifty hectoliters are produced per hectare.
Harvest: the harvest is manual and generally takes place between the end of August and the first week of September. The picking is done in the early hours of the morning, a process that helps preserve the aromas of the grapes.
Winemaking: During the harvest, the grapes are carefully selected. After destemming, white wine production is carried out with fermentation in stainless steel at controlled temperature for two-thirds of the must, while the remaining third is fermented for two months in new French oak barriques. After the racking, the two parts are combined into a single mass, which is allowed to mature in a steel vat before being bottled in April or May.
