This Monte Veronese dop can be defined as "old". Produced with raw cow's milk and aged 12-18 months. The rind is thin and elastic, and the paste has a color that varies from pearl white to straw yellow, especially in the summer period. It has a medium eye.
It has a scent of wildflower honey, especially during the summer, and fresh butter. Intense and savory on the palate, it has a nice gustatory persistence with a pleasant finish.
