The Bitto DOP in a 1 kg cut can be used for traditional preparations such as pizzoccheri della Valtellina. Savory and aromatic, it is very well suited for making whole grain polenta conce such as the polenta taragna typical of these lands.
TASTING
Bitto is a cheese for meditation, the texture is crumbly and very soluble, the strong flavor leaves hints of dried fruit, hazelnut, walnut, butter, hay, and dried flowers. It is excellent when paired with structured red wines and, accompanied by delicate honeys, also with sweet wines made from white grapes.
