Bitto Dop 300g

The Bitto DOP is the king of Valtellina, a noble cheese of great value with a beautiful aromatic complexity that makes it unique. It is produced with milk that comes only from alpine pastures.

The name Bitto comes from "perennial" precisely for its ability to age for a long time. We are talking about decades. The aging offers valuable organoleptic sensations that make it one of the finest cheeses of our Italian production.

CHARACTERISTICS

Bitto is produced exclusively with whole cow's milk obtained from traditional breeds of the area, to which goat's milk can be added in an amount not exceeding 10%. Bitto has a cylindrical, regular shape, with flat surfaces and a concave edge with sharp corners.

Bitto Dop 300g: use in the kitchen

The Bitto DOP in a 300-gram slice can be used for typical preparations such as pizzoccheri from Valtellina. Savory and aromatic, it is very suitable for preparing wholemeal polenta such as the polenta taragna typical of these lands.

TASTING

Bitto is a cheese for meditation, the texture is crumbly and highly soluble, the strong flavor leaves hints of dried fruit, hazelnut, walnut, butter, hay, and dried flowers. It pairs excellently with structured red wines and, when accompanied by delicate honeys, also with sweet wines made from white grapes.
