It is one of the typical cheeses of Tuscany, one of the best-selling abroad, on par with, if not more than, Parmigiano Reggiano.
It is a hard cheese made from pasteurized sheep's milk. It takes its name from the ancient Renaissance town of Pienza in the province of Siena, created by Pope Pius II. Here, around the Senese clay hills, the pastures are poor but ideal for sheep. This black version is aged for 70-100 days and its flavor is very intense and the texture particularly crumbly.
