The recipe follows the ancient Tuscan peasant tradition, which involves adding wild fennel, much more aromatic and flavorful, to the mixture made from selected parts of ham, bacon, cheek, and pork shoulder.
The Pedrazzoli Salumificio uses the small-seeded wild fennel for the production of this salami.
