The recipe follows the ancient Tuscan peasant tradition, which involves adding wild fennel, much more aromatic and flavorful, to the mixture made from selected parts of ham, bacon, cheek, and pork shoulder.

The Pedrazzoli Salumificio uses the small-seeded wild fennel for the production of this salami.

The peculiarity of the BIO Fennel Salami is certainly its completely organic production, which allows the salami to be free from dairy derivatives and added preservatives.
