The hills of San Daniele in Friuli Venezia Giulia are ideal from a climatic point of view for aging. The Celtic peoples who inhabited these hills, where numerous fortifications and settlements can still be seen today, knew this well. After them, the Romans also greatly appreciated the use of salt for aging and preserving pork legs, to the point that, for example, in Aquileia, there is a pillar of a butcher depicted holding a ham. The San Daniele was a precious product of these lands that was also used as a medium of exchange towards the more northern and eastern countries such as Austria and Hungary. The prosciutto di San Daniele is shaped by the fresh breezes descending from the Carnic Alps and the briny residues from the winds of the Adriatic Sea. The taste is sweet, although the savory salty value is more intense compared to Parma.

Salumificio Pedrazzoli, Friuli Venezia Giulia

Pedrazzoli is the first cured meat factory in Italy to produce BIO. Since 1996, it has added this segment, which is becoming increasingly important each year. Grains and food products from organic farming, livestock raised in open spaces, a drastic reduction of preservatives, GMO free, limited intake of salts and fats. The entire production is particularly suitable for the diet of celiacs and the dietary regime of intolerant individuals. Many of these cured meats are listed in the national pharmaceutical directory for celiacs. 
The Bio Primavera line was awarded in 2013 in Paris with the prestigious Good Pig Honorable Mention at the Animal Welfare Awards. The ceremony featured the entire European market, and Italy was represented by the Pedrazzoli family. The Good Pig Honorable Mention was awarded for “the commitment to the welfare of sows, demonstrating how it is possible to make choices that also benefit animal welfare.”
