This Rolled Pork Belly from Salumificio Pedrazzoli is without rind, synthetic casing and is with garlic, made from pork meat sourced from the same farms as the Pedrazzoli family.
To obtain this product, the central part of the pig's belly is used, trimmed and skinned. It is then hand-salted and rolled. Everything is then tied and aged for at least 30 days.
Pork belly has ancient historical origins dating back to the time of the Roman Empire when it was given to legionaries in slices every three days. In subsequent eras, it also served as a method of payment, as during the Longobard period, when bricklayers were paid with cuts of pork belly at the start of the seasonal work.
The Pancetta arrotolata senza cotenna e con aglio from Salumificio Pedrazzoli is, above all, an excellent cured meat to use in a charcuterie board. It can be served either pure, preferably with hard-crust bread, or paired with a slice of ripe pear, which helps cleanse the palate. Its use in the kitchen is versatile: for example, chopped into cubes in particular sauces for regional pastas. It pairs wonderfully with young red wines, even lively or sparkling ones, such as Oltrepò Pavese Bonaria.
This pancetta has a bright red color interspersed with white and emits a light aroma with a sweet scent. It has a light and delicate flavor.
