Il Cantone - naturally cooked zampone

The Zampone comes from the ancient Modenese tradition and made its appearance in Mirandola during the siege brought by Pope Julius II. The locals, to hide the pigs so they wouldn’t fall into the hands of the invaders, slaughtered all the animals and put the ground meats into the legs and the rind (hence the cotechino). The particular shape of the Zampone and the softness guaranteed by this type of container has remained unchanged to this day. Emile Zola was fond of it and always said, “if you want cheer, the zampone brings joy to a sad soul!”

For this line, the Pedrazzoli family uses very mature meats from pigs weighing over 200 kg and guarantees a minimum aging period. All products have also been designed to become true gifts for special occasions or events. Renowned Italian chefs and industry magazines have dedicated initiatives to enhance these exceptional cured meats unique to Italy. Among the luxury Q+ products are not only white pigs but also the rediscovery of the ancient Black Pig of Parma, the living historical testimony of the charcuterie tradition of the Po Valley. This was the pig that grazed these lands during the Roman Empire; an indigenous breed characterized by its black coat and long wattles. A wild life of almost two years among the woods of Parma's hills. An extended aging period (over 6 months) distinguishes the Q+ line of Nero di Parma.
