Manitoba BIO type 0 soft wheat flour 500g

The name comes from the ancient Indian tribe that inhabited the lands of North America and today is particularly persistent in Canada. The region of Manitoba has become famous for its flours defined as “strong” due to their great capacity to absorb water. A characteristic that since the beginning saw them as enhancers of our European soft wheat flours. Manitoba is a flour that contains a large quantity of insoluble proteins which, when in contact with water, produce gluten in the dough and thus promote a stable network that provides stability during the leavening. It can also be used for pasta to improve cooking by reducing stickiness and offering a better "al dente" sensation. Naturally, Molino Rosso is careful to select BIO grains that have never undergone any treatment with synthetic chemical products.

Manitoba BIO type 0 soft wheat flour 500g: How is it produced

Antico Molino Rosso, Veneto

The sweet little boat resting on the Menago stream welcomes all those who arrive for the first time at Antico Molino Rosso by Gaetano Mirandola. A suggestive image that captures the essence of this beautiful organic reality of producing high-quality flours and cereals. Water, earth, man. The virtuous triangle that generates life. Gaetano Mirandola has always been recognized as one of the most active and important ambassadors and communicators of the BIO value in Italy. Starting from the province of Verona, from lands unknown to most, with a centuries-old cereal vocation among ancient riverbeds, products from the old pathways of the Adige river and its branches in ditches and streams that have served the local populations and their harvests. Once, those in low Veronese were lands with many mills, and even today there are important testimonies like that of Molino Rosso. Gaetano Mirandola has created a laboratory company of ideas in these places even before a true dusty mill of flours and cereals. Here begins his idea of food balance based on knowledge. A value that concerns not only his company but especially those who operate on those lands to produce healthily and responsibly, respecting the environment and its integrity. A strong action of awareness and communication towards grain-producing companies, bakers, and all artisans who worked those flours. An effort that has borne fruit and has changed the way of conceiving the quality of mill products among operators and, increasingly, among consumers. When you buy a flour from Molino Rosso, you participate in a process of environmental, economic, and productive sustainability. All while respecting human rights and the cleanliness of creation. Gaetano Mirandola has accustomed the world of communication to talk about biodedicated companies, that is, realities that produce only what they can based on the seasons and what mother nature reserves each year. There is nothing chemically forced. Nothing stressful for nature and plants. It is a new concept that brings man closer to the earth and makes him part of its essentiality. We made the selection of products together with Gaetano, who reserved for us an exclusive that enriches our virtual shelves; that sixth sense that every form of life has... its soul.
