Dehydrated sourdough yeast from organic wheat agriculture in powder form. Sourdough yeasts are obtained through a 50-day fermentation process before being dehydrated and packaged.
The dehydrated freeze-dried sourdough yeast contains a very small percentage of dry yeast, which serves as a starter to get it going. The result, during fermentation, will be predominantly lactic fermentation (mother) for the majority of microorganisms, with a small percentage being acetic.
