The Varaita Valley is an excellent natural habitat for this type of fruit, which is normally produced in warm areas like Sicily. It has a very high sugar content and white flesh. For this reason, the acidity brought by the climate of this valley makes them much more pleasant and balanced. The freshness combined with the very pronounced flavor, due to the nighttime temperature changes that enhance the aromatic component, gives life to a particularly intriguing fruit that is certainly unique in its kind. The skin is a bit fuzzy but not very thick. The pulp is of good firmness with an elegant fiber.
With this flat peach, you can prepare very refreshing fruit juices with a nice sugary component. A Tabacchiera peach jam is the best you can have; its white flesh has hints of sweet almond, making it an ideal enhancement for delicious preserves. It is also used for jellies and summer slushies due to its aromaticity. Excellent raw to make a hot afternoon refreshing and to naturally boost our vitamins.
