The Cuore di Bue is eaten in salads and is the ideal tomato for excellent succulent caprese salads. Moreover, it can be cut into chunks with fresh basil and wild mint or wild fennel. It can also be added to the caprese pizza at the end of cooking with some good DOP buffalo mozzarella from Campania. The cuore di bue is also used in the aesthetic preparation of bruschetta drizzled with extra virgin olive oil and a bit of fresh basil.
