They also call it the square pepper and indeed its shape resembles it a lot. A medium-sized pepper with an excellent consistency and a significant thickness of 10 mm. This is a product with a long history, first found in 1915. It comes from a virtuous cross between a small indigenous pepper and the famous square pepper from Nocera. Today, after mass selection and a restriction of the territories for production, the province of Cuneo has established a Consortium for Protection and the PAT (Traditional Agri-food Product) certification. It is indeed a vegetable that finds an excellent habitat in soils with good grain and highly draining with an important superficial organic composition. Here, the Val Varaita gives its best. Moreover, it does not like high humidity conditions, which are impossible in the valley.
