An ideal territory for potatoes that require highly breathable soils. The most typical potatoes here are those with white flesh and red skin. They have always been used to prepare gnocchi or for mashed potatoes or baked with meat. The "petate," as they are called here, have always remained the most consumed food by mountain populations since the arrival of the Cimbri people from Saxony in the 1200s - 1300s.
