The Tuscan mushroom soup uses local products such as chestnuts, a bit of chili pepper, and Tuscan sage.
It is recommended to cook it in a terracotta pot as is customary in Tuscany, especially warming it gently over a low flame.
The mushrooms are all sourced from the beech and maritime pine forests of the Siena and Maremma areas, where the properties of Agriturismo Il Poggio are located.
The soup is made with mushrooms of the following types: Porcini (Boletus edulis), Pianarolo (Suillus luteus), Shiitake (Lentinus edodes), Gelone (Pleurotus ostreatus), Yellow chanterelles (Poliota nameko). It also contains chickpeas, chestnuts, sage, Tuscan extra virgin olive oil, salt, garlic, onion, chili pepper, and pepper. It has an excellent consistency, and if you want to cook some pasta, it is recommended to dilute it with a bit of water useful for cooking the pasta. To make it even more appetizing, it is suggested to sauté some sliced chanterelles or porcini with extra virgin olive oil, salt, and a bit of garlic and parsley until they are nicely golden. Then place them on the surface of the soup and perhaps add a piece of fresh goat cheese. Perfect for toasted Tuscan bread crostini. Ideal to pair with Chianti Classico DOCG and Tuscan red wines based on Sangiovese.
