This is one of the most typical Tuscan soups. Lentils are a legume that has always been used since antiquity by the Etruscan and Roman populations as an energy booster for the hardest and most exhausting days. The soup was made in terracotta pots that were left to simmer for a long time over large fireplaces, filling every corner of the kitchen with its aroma. Tradition pairs it with cotechino in the New Year's Eve dinner as a propitious food for the following year.
The Lentil Soup is made with Tuscan green lentils and also contains extra virgin olive oil, pork bacon, tomato paste, sage, garlic, rosemary, salt, and pepper. It is served in the Tuscan way, seasoned with a bit of bacon to make it even tastier. We recommend serving it with crispy bacon on top and toasted crostini lightly brushed with garlic. It is also excellent with a slice of soft and slightly tangy goat cheese and fresh rosemary leaves. Perfect with red wines from the Italian tradition, Valpolicella Classico DOC, Sangiovese DOC, Chianti DOCG.
