The territory of the plain near the Po river offers very aromatic hays. The Brown breed is one of the most prized for the production of Parmigiano Reggiano DOP. Valserena is a historic dairy in the municipality of Torrile between the hills of Parma and the Po plain. A high-profile reality that works exclusively with milk from this breed and proprietary hays of various types. Special attention is given to the welfare of the cows because, as they say in the company, if the cows are well, the milk is better, and consequently, the cheese will be unrivaled! In this dairy, 6 wheels of Solo Bruna weighing 38 kg each are produced daily. We have chosen it at an important aging period that provides great organoleptic results. Solo Bruna means the elite of Parmigiano Reggiano DOP and the guarantee of a cult brand in the denomination landscape.
The aging over 30 months allows us to say that this cheese is practically lactose-free, although it may retain some traces.

Additionally, the aging we have chosen ensures an excellent tasting result. It offers a beautiful creaminess on the palate with a very precise balance between sweetness and salinity. An excellent cheese for platters with wildflower and acacia honey. Perfect for succulent appetizers and tasty starters paired with a drop of Traditional Balsamic Vinegar from Modena or Reggio Emilia. It has a nice aromatic intensity and substantial persistence. Ideal for classic method sparkling wines and for medium-bodied white wines. Also great with red wines like Valpolicella DOC or Chianti DOCG.
