Ermenegildo Giusti wanted to demonstrate with this wine that his beloved hills between Asolo and Montello have perfect soils for the production of a cuvée that enhances the most international grape varieties like Chardonnay and Pinot Noir. Grapes that come from the beautiful cru located around the ancient Abbey of Nervesa della Battaglia (TV).
A wine with olfactory complexity featuring sensations of fruit such as golden apple, pear, and yellow citrus zest. A lovely hint of brioche and fresh bread crust. Sweetly spiced with sensations of ginger and turmeric. On the palate, it has a crisp bubble. An overall creaminess that offers a nice savoriness and freshness, along with a distinct sensation of ripe fruit. The finish brings pleasing notes of crunch and toasted dried fruit.
An excellent sparkling wine for fish appetizers, grilled fish, and moderately spiced and complex first courses. It is also great with beef tartare, particularly with finely chopped Charolaise or Limousin beef or Chianina PGI. It's worth trying with Asian cuisine for its ability to guide some aromatic characteristics towards sweet spiced components.
