The grapes are harvested by Gildo always after continuous tastings in the vineyard. Because it is the only way to understand the real quality and the right time to harvest. Usually, the appropriate rhythms of the seasons are awaited, and in this 2005, the grapes were a bit late compared to other years. After being collected in baskets, the grapes are quickly taken to the winery where they undergo destemming and crushing. After fermentation in steel tanks, this wine undergoes an aging process that initially takes place in cement tanks and then the malolactic fermentation is awaited in wooden barrels. This process tends to relax the wine very well and reduce harshness to bring out a pleasant elegance of the fruit and overall straightforwardness.
This noble blend of Merlot and Cabernet Sauvignon keeps alive Gildo's antagonistic philosophy and, at the same time, showcases an expressive power of the territory, manifested in a distinct fruitiness of blueberry and cherry with green and spicy notes. A nice elegance of the fruit and integrity that is accentuated on the palate with a decisive acidity that represents the common thread of the wines produced on these hills. Wild notes of sour cherry are the intriguing element of a wine that does not betray its years of aging.
The best pairings for this wine are certainly cured meats and moderately aged cheeses, as well as high-quality red meats. It is also excellent with spicy dishes and game, both fur and feather.
Serve in a large tulip glass and let it breathe in the glass before tasting.
